Welcome and Happy Holidays Huddle Haven Team!  Our guest this week is Gabria Cathcart, a “Functional Wellness” expert and founder of The Functional Wellness Clinic & Consultation; Gabria is a certified functional medicine practitioner through the Institute of Functional Medicine, she is also a board certified Family Nurse Practitioner through the American Academy of Nurse Practitioners (AANP) who graduated from Baylor University; she has been in the medical field for 18 years.

Prior to establishing her practice she has worked in the DFW area practicing medicine—while in the field she developed a strong passion for Functional/Integrative and Lifestyle medicine. She believes walking alongside a patient and showing them how they can achieve optimal health is her primary focus.

She serves a wide-array of patients:  Some who are chronically sick (auto-immune disorders, hormonal dysfunction, serious digestive issues, migraines, etc.); some who are simply wanting to elevate their current health—Nutrition / Diet, Female & Male hormone regulation, Couples dealing with conception issues,; and some healthy-robust individuals who want to further optimize their health through proper nutrition / diet, vitamin supplementation, etc.

Gabria’s mission is to help individuals achieve optimal health.  She provides functional evidenced based, compassionate care to patients in a timely manner.  Her unique approach to diagnosing and treating diseases and disorders recognizes that lasting health depends on resolution/remission of the root causes of patient’s diagnosis.

020 Hey Huddle Haven Team, we’re thrilled to be featuring Taylor Collins & Katie Forrest this week.  A powerhouse husband / wife team that co-founded EPIC Provisions and Roam Ranch.  They could be featured as Mentor Models, a couple livin’ their dream–their day to day is all about Bucket List Livin’; and they most certainly exemplify individuals that are optimizing their 3P’s–Physical, Personal and Professional wellbeing.

We were stoked that Taylor was able to sit down with us at his beautiful home on the range—ROAM RANCH.  What a resume this couple has:  They met in HS, went to college together, both became elite endurance athletes, and both proved to be super savvy entrepreneurs.  They started a commercial recycling company while in college; then launched a “vegan” snack company making energy bars; but after their health began to deteriorate as vegans…they hit the reset button, not only to improve their health but also used their experience to reset their company.  This is when EPIC Provisions was born—offering unique and nutritional meat / protein snacks.  EPIC was so successful, in 2016 General Mills made them an offer they could not refuse.

Katie and Taylor started ROAM RANCH in 2017—located in the heart of the majestic Texas Hill Country, ROAM RANCH sits on hundreds of acres in Fredericksburg, TX.  The cool thing about ROAM RANCH is the couple’s commitment to land regeneration.  All their animals have the ability to roam freely, sharing pastures, ensuring all play a specific role that supports the health of the land.  They raise bison, cattle, goats, hogs, chicken, turkey, and ducks—all are free range, pastured-raised, 100% grass fed, and free of added hormones and antibiotics. Most importantly, their animals are managed in a way that creates a net-positive return on the planet.

In this MENTOR MODEL episode, we pay tribute to a true leader & influencer who changes the world each day.  We feature a good friend, and great example of someone who’s dedicated his professional life to service–he’s literally saving lives on a daily basis.

For many years now he’s worked as Police Officer in some of the toughest Metro areas in the state of Texas.  He’s the kind of guy who left a cushy corporate job because he felt a calling.  He calls his rationale “corny” but I call it heroic.  He had a passion to protect people, and to give communities a sense of safety.  He’s also the kind of guy that has put a strong stiff-arm to various promotional opportunities, completely content in his role as a Patrol Sargent because it gives him the opportunity to coach many young officers.

We hope all those listening to this episode will take this in with an open ears, open eyes, open minds, and open hearts.  It has become way to convenient to take sides lately; far too easy to either “Hate the Blue” or “Back the Blue”…instead of seeking to understand how in this pressure-packed, stressful social & political climate we can all find our way towards grace & unity.  We all can do our own little part to better comprehend exactly what our law enforcement professionals go through day-in & day-out.  When we give each other some space for context & nuance, we can actually have meaningful conversations.

Rhonda & I do our best to not reveal the full identity of this person (no last names); as he’s spent many years of his career working undercover, and may be called on to do so again.  Additionally, he and his team currently work in some pretty tough areas across town, so we try to respect anonymity.  All y’all need to worry about is you’re gonna hear from a real-life, everyday HERO.

Hello Huddle Haven Team!  We can’t wait for you to hear our guest this week.  Dr. Ken Berry is unlike any doctor you’ve seen, heard or visited.  You want to know why?  Because he actually listens to his patients, actually answers patients questions, gives patients the TLC (tender-loving-care), and sometimes the tough love they need to get their asses off the couch and get healthy!

We highly recommend his book, Lies My Doctor Told Me…where he’ll hit you between the eyes with medical myths that can harm your health.

Ken is a self described “former fatty” he was, “miserable, ignorant to what was actually going on with his own health.”  That was until he slowly discovered the power of removing the slow-poisons of our standard US diet, and replacing them with the nourishment of what he terms the “proper human diet.”

Dr. Berry is a Board Certified Family Physician and Fellow in The American Academy of Family Physicians. What we love about Dr. Berry is he’s not trying to deceive patients into dumping more big-pharma poison into their bodies, as he doesn’t believe a magic pill is going get you healthy.  He shoots you straight, giving solid advice that can keep you healthy and happy.

On this episode he’s going to tell us how we can use our diet to change our lifestyle in order to achieve the long-term health we all desire.  We talk low-carb/ketogenic/carnivore diets, intermittent fasting, reversing auto-immune disorders, diabetes, heart disease and much more.  Advice to all listening:  Let’s charge forward with Dr. Berry in declaring an all-out war against these epidemics plaguing our society; and let’s join him on the path to optimizing our 3P’s = Physical, Personal & Professional Wellbeing!

4 avocados, mashed
4 limes, juiced
Redmond’s real salt, to taste
2 bunches of cilantro, chopped
Half of a red onion, chopped
1 cup of tomatoes, chopped

Hello Huddle Haven Team!  Are you exhausted with all the Election Day insanity?  We’ve got a remedy—listen to our humble attempt to add a little levity to your day.   In this light-hearted edition of “Keep It Super Simple” = KISS we explore:  Super simple ways to CANCEL the “cancel culture”; super simple service ideas for the holidays; super simple ways to shun technology; super simple activities for the holidays; super simple ways to stay fit during & post holidays; super simple gift ideas to stay on budget; and super simple healthy holiday recipes. On a day that is dominated with distrust and descension…let’s explore ways to stick together!  Remember…Hang In There…Hope Is On The Way!

Rhonda’s Holiday Recipes:
Cheese Stuffed Mushrooms:
-medium button or Remini mushrooms
-8 oz of cream cheese (softened)
-8 oz of smoked cheddar cheese shredded
-2 oz jalapeños chopped (optional)
-4 oz shredded parmesan cheese
1. Clean the mushrooms with a damp paper towel. Prep the mushrooms by popping the stem off the mushroom.
2. Mix the cream cheese with the shredded smoked cheddar cheese, jalapeños, and salt and pepper.
3. Fill the mushroom cavities with the mixture.
4. Top with parmesan cheese.
5. Place in a baking dish side by side cheese up.
6. Bake for 30-35 minutes in a 350 degree oven.

Prosciutto Wrapped Asparagus:
-16 asparagus spears, with the ends snapped or cut off
-8 slices of prosciutto (cut in half to have 16 pieces)
-olive oil or avocado oil
-salt and pepper
1. Preheat the oven to 400 degrees.
2. Wash and snap off the ends of the asparagus. Wrap a 1/2 piece of prosciutto around the middle of each asparagus and pull tight.
3. Brush with olive or avocado oil.
4. Salt and pepper to taste.
5. Bake for around 20 minutes or until prosciutto is crispy. (turn over 1/2 way)

Brussel Sprouts with Pancetta:
-2 oz pancetta, minced
-2 lb of Brussel sprouts, with stems and outer leaves removed
-2 tsp olive or avocado oil
-garlic 3 cloves minced
-salt and pepper
1. trim the stems off of the Brussel sprouts and remove the outer leaf. Thinly slice each one.
2. cook the pancetta in a sauce pan until golden around 5 minutes
3. add olive or avocado oil and garlic
4. add shredded Brussel sprouts and salt and pepper to taste
5. cook on high for 6-10 minutes or until tender and crispy

Raspberry Cheesecake Bites:
-16 oz cream cheese (softened)
-1 large egg
-1 tsp lemon juice
1/2 tsp vanilla extract
-1/2 cup powdered monk fruit
Raspberry filling/swirl:
-4 oz. rasberries
-1 1/2 tbsp water
-4 tsp powdered monk fruit
Toppings:
-whipped cream
-raspberries
1. Preheat the oven to 350 degrees. Line a mini muffin pan with 24 mini muffin liners. Brush with oil.
2. Place the raspberries, water, and powdered sugar into a small saucepan. Heat over low heat until the raspberries start to soften around 2-3 minutes.
3. Use a spatula to smash the berries. Simmer a few more minutes while the sauce thickens. Remove from heat and set aside.
4. Use a mixer to beat the cream cheese and powdered sugar together at a low to medium speed until fluffy.
5. Beat in the egg, lemon juice, and vanilla extract.
6. Spoon the cheesecake filling evenly into the mini muffin liners.
7. Spoon 1/2 tsp of the raspberry filling over each cream cheese cup. Use a toothpick to swirl into the batter.
8. Bake for 10 to 15 minutes until the bites are puffy and almost set, but still a little jiggly.
9. Remove the cheesecake bites from the oven. Cool at room temperature for an hour.
10. Serve with whipped cream and top with a raspberry.

His new approaches to digital media have been critical in promoting ideals of social change — such as equity, empowerment, responsibility and transparency — to the forefront of business and popular culture.

In 2012, Jonah released Winning the Story Wars, a deep dive into the stories that have the power to break through the noise and to open minds, move hearts and change behaviors. In 2018, Jonah published Unsafe Thinking: How to Be Nimble and Bold When You Need it Most; exploring why some individuals and organizations are smart enough, and strong enough to elevate performance in an ever-changing world.

Now Jonah serves as Executive Director of One Project; a non-profit initiative working globally with communities to design, implement, and scale new forms of governance and economics that are equitable, ecological, and effective.

In addition, we were able to explore the many thrills and ills of social media—One Project (Jonah and Founder, Justin Rosenstein) along with The Center of Human Technology, were central players & contributors in the Netflix Documentary: The Social Dilemma.

Hello Huddle Haven Team!  This is another Bucket-List-Living episode…we are shining a red-hot-spotlight on individuals who are livin’ like they are dyin’…not wasting a single day in checking things, big and small off their bucket lists.

It was so nice to huddle up over some cold brews & red wine with a couple that we love and admire! Trey and Paula Thrash always have been and continue to be a pretty cool hang.

We’ve always looked up to Trey and Paula as fabulous friends, as parents we admire, and as astute business professionals.  This couple has paved a really cool path that so many of us should try to follow.

Now that they are “empty nesters” they are definitely livin’ the dream.  They recently headed out to the wild, wild west for a road trip:  46 Days, 11 States, 9 National Parks, and 8,220 miles…what a great way to conquer COVID claustrophobia!

In addition, to hearing some great insight from Trey & Paula, we’ll take a look at some other cool Bucket List adventures and recommendations.

Hello Huddle Haven Team!  Envision the sight of glowing stadium lights just over the horizon…take in a deep breath to smell freshly cut Bermuda grass…hear the sound of a marching band playing or cheerleaders cheering…and embrace the feel of Fall.  It is that time of year, the slight chill in the air only enhances the excitement felt as the gridiron gladiators hit the field to honor a true to Texas tradition, “Friday Night Lights.”

In this episode we look at 3 MENTOR MODELS.  These gentlemen are true leaders and influencers who are literally changing the world, one athlete at a time.  All know the old saying, “…any man can be a father…but it takes someone special to be a daddy.”  I feel the same way about great Coaches.

Regardless of your profession or path in life, we can all learn lessons from individuals who take the time to care, who devote their lives to lifting others up, people who invest in relationships, knowing potential can and will be fully realized when you create a climate unity, when you surround talent with tools, and when you seek serve others = the entire team is elevated!

You will hear from 3 of my heroes, all Texas High School Coaches; but all have taken distinctly different paths.  You’ll hear what it is like to coach in tiny-town Texas, where you have a small pool of athletes; and you’re relying on them to play multiple sports all year long.  You’ll hear what it is like to devote a career to the inner-city student-athlete; where kids not only need football, in some cases they need a family.  Finally, you’ll hear what it is like to lead athletic programs at schools with 3,000-4,000 students with massive followings.
